Ingredients for the Summer Pasta Salad

- 16 oz Box of Orzo Pasta
- 2 Red peppers
- A Bundle of Asparagus (or as much as your want!)
- Green onions – one bundle
- 1 Bottle of Creamy Caesar Dressing
- Finely Shredded Parmesan Cheese

Orzo Summer Pasta Salad Instructions
Step 1
Gather your ingredients.
Step 2
Cut the asparagus into approximately one-inch pieces.
Step 3
Cook the orzo according to the package directions.

Add the asparagus to the last 2-4 minutes of cooking time.
Step 5
Rinse with cold water and drain well.
Step 6
Dice red peppers.
Step 7
Slice green onions.
Step 8
Combine all ingredients in a bowl – including the cheese and caesar dressing.
Step 9
Mix it well and let it soak! You can even make it the night before.

I have been using orzo for pasta salad for years. In fact I use many different pastas for my pasta salads. One of the favorites using orzo is the Orzo Caprese. 12 0z orzo, two cups cherry toms cut in half, two cups basil chiffonade, and one package mozzarella pearls. For the dressing I make a simple Italian and replace the red wine vin with balsamic vin. Salt and pepper to taste. Of course orzo is great for any pasta salad mix. Cheers,
